Our Semi-dry lager recipe gets a makeover as the yeast is left in suspension to create a rounder mouthfeel, enhanced hop character, distinct bread notes, and a slight haze.
Zwickel refers to the sample port on fermenting tanks brewers use to taste and test the progress of fermentation. Sample beer pulled during fermentation is full of yeast and often has "green" beer flavors especially acetaldehyde. Zwickel lagers are allowed to completely mature, but they go unfiltered and a significant portion of the yeast is left in the package affecting both mouthfeel and flavor.
